Kueh Lapis

Bake Kueh Lapis yesterday, here my finally product. And where all the steps goes?! *Grumble* Remember I went to Jia Lei leant how to bake kueh lapis? The trainer said, had to finish baking the kueh lapis within an hour I find it totally mission impossible! In fact I spend almost 3 hours baking it!

The trainer she bake every layer for 2 minutes at 200C. I bake mine at 230C 3 to 3 ½ minutes per layer and yet the bloody cake still won’t brown! Heck, I just continue bakes the next layer.

Strain your eyes and did you see how thin the layer is?! No? Never mind I counted the layers I got about 22 layers! Guess that is the reason I burnt the bottom. Perhaps next time I should bake them in “block” and no more layers! LOL Gosh... my hands are still aching.

Thanks for your kind words, this already my 4th time trying. Among the 4 of them so far this “look” more like a cake. Previously the 3 either they look like kueh or dry like crust. I’m already “xin hui yi leng”. Heehee

Good even colour though, never mind, keep trying you will succeed!
When I did mine, my cake tin was less than 5cm from the heat, and the layer browned very quickly, maybe you put your cake tin too far below the heat?

Thanks, *smile* probably next time. I need a lot of stamina to bake kueh lapis. LOL

The microwave oven I have at home doesn’t have upper and lower heat element. The heat element is built at the side. And the oven has 2 buttons for baking one is Covn.Bake and another one is 2 Level Conv.Bake I try both and it doesn’t brown the cake.

kueh lapis IS tough. nvm then, go out and buy one from indonesia then indulge ;)

My mom went to Indonesia and she bought one block fresh kueh lapis for S$10!!! Cheap hor unlike those in plastic package she bought one only aiyah so wasted should buy more.

Yah, bring in and out the oven. The oven I have at home unlike other ovens. My oven stop running once the oven door is open so I have to heat the oven again before putting it back to bake again.

Hi,

For Kueh lapis, after 1st layer, can only have the grill/top heat on. I forgot to turn off the bottom element once and the cake burned on the bottom as well. I find placing the shelf higher, nearer the grill will speed up browning. Not sure if you can try a water bath (place baking tin in tray of water) to stop the bottom from burning, if you turn off bottom element.

Thanks for the tips. But problem is the oven I had it at home doesn’t has upper and lower heat element and the heat comes from the side. I tried the water bath method before and I guess that the reason the cake turns out like “Kueh”. LOL
